Ingredients
For the espresso brownie layer:- ½ cup (115g) unsalted butter
- 6 oz (170g) semi-sweet chocolate, chopped
- 1 tablespoon espresso powder
- 1 ¼ cups (250g) granulated sugar
- 3 large eggs, at room temperature
- 1 teaspoon vanilla extract
- 3 tablespoons vegetable oil
- ½ cup (40g) unsweetened cocoa powder
- ¼ teaspoon salt
- ½ cup (65g) all-purpose flour
- ⅔ cup (160mL) boiling water
- 1 tablespoon espresso powder
- 1 tablespoon sugar
- 12 Savoiardi ladyfingers
- 8 oz (225g) cold mascarpone cheese
- ⅓ cup (45g) powdered sugar
- 1 teaspoon vanilla extract
- 1 cup (240mL) cold heavy whipping cream
- Cocoa powder, for dusting
Instructions
- Bake the espresso brownies: Preheat your oven to 350°F (175°C). Grease an 8x8-inch pan and line with parchment paper, leaving a bit overhanging for easy removal later.
Melt the butter in a medium saucepan over medium heat until it just begins to sizzle. Remove from heat, then stir in chopped chocolate and espresso powder until silky smooth.
Transfer the mixture to a large bowl, add sugar, and whisk (the mix may look grainy — that’s normal!). Beat in eggs one at a time, then mix in vanilla, vegetable oil, cocoa, and salt. Finally, fold in the flour until just combined — don’t overmix!
Pour the batter into the pan and smooth evenly. Bake 27–32 minutes, until the top looks set and a skewer comes out with fudgy crumbs. Cool completely before adding the next layers. - Prepare the coffee-dipped ladyfingers: In a shallow dish, stir together boiling water, espresso powder, and sugar. Let cool. Quickly dip each ladyfinger in the coffee mixture for about a second — just enough to soak, not soggy — then layer them over the cooled brownie. Trim edges if needed.
- Make the mascarpone cream topping: Whip mascarpone, powdered sugar, and vanilla until smooth. Gradually pour in the cold heavy cream while mixing on low, pausing occasionally to scrape the bowl. Increase speed and whip until stiff peaks form.
Spread the cream over the ladyfinger layer. Chill for at least 1 hour to set. Dust with cocoa powder, slice, and serve.
Pro Tip: For clean slices, use a hot, dry knife between cuts. These are perfect as Family Style Desserts, Sympathy Desserts, or any Over The Top Brownies occasion.
