Traditional cheesecake can be fussy, dramatic, and one cracked top away from a full-blown kitchen meltdown. Been there. That’s exactly why these high protein no-bake cheesecake bites exist—and honestly, they might be even better than the classic.

Cheesecake fans, this one’s for you. These bite-sized cheesecake treats deliver rich, classic flavor in a fun, poppable form—without ever turning on the oven. Each mini bite comes in at just 55 calories, includes 4 grams of protein, and somehow still tastes like the real deal. Simple, satisfying, and dangerously snackable.
Ingredients
Cheesecake Base- 62 g (2 scoops) vanilla whey/casein blend protein powder (PEScience works great)
- 8 oz reduced-fat cream cheese (any variety is fine)
- 75 g plain nonfat Greek yogurt
- 1 teaspoon vanilla extract
- 40 g powdered sugar substitute or regular powdered sugar
- 55 g Cool Whip (fat-free or regular both work)
- 52 g (½ cup) graham cracker crumbs
- 52 g (½ cup) graham cracker crumbs
Instructions
- Add all cheesecake base ingredients—except the graham cracker crumbs—to a large mixing bowl. Use an electric hand mixer (or stand mixer) to blend until the mixture is thick and completely smooth. This mixture is dense, so a mixer makes life much easier.
- For smoother mixing, let the cream cheese and Cool Whip sit at room temperature for about 15 minutes before starting, especially if you’re mixing by hand.
- Gently fold in the graham cracker crumbs until evenly incorporated. Cover the bowl and refrigerate for 2–4 hours, or overnight. This chilling step helps the mixture firm up and improves the overall flavor, so don’t skip it.
- Once chilled, pour the coating crumbs into a wide bowl. Scoop small portions of the cheesecake mixture using a spoon or cookie scoop and drop them directly into the crumbs. At this stage, the mixture will be sticky—totally normal.
- Roll each portion in the crumbs until fully coated, then use your hands to shape it into a smooth ball. The crumb coating makes them much easier to handle.
- Repeat until all the mixture is used. You should end up with about 25 bites.
- Place the finished bites back into the fridge or freezer for at least 1 hour to fully set.
Storage
Store the cheesecake bites in an airtight container in the refrigerator for easy snacking all week, or freeze them for long-term storage. When enjoying from frozen, let them sit at room temperature for about 5 minutes to soften before eating.
