Crispy Bacon Wrapped Chicken

Ingredients
- 4 boneless, skinless chicken breasts (6 oz. each)
- 2 tsp garlic powder
- 2 tsp brown sugar (or coconut sugar)
- 1 tsp Italian seasoning
- ¼ tsp paprika
- ¼ tsp salt
- ¼ tsp black pepper
- 8–12 slices of medium-cut bacon
Instructions
- Preheat your oven to 400ºF. Line a baking sheet with foil for easy cleanup, then place a wire rack on top and set it aside.
- In a small bowl, mix together garlic powder, brown sugar, Italian seasoning, paprika, salt, and pepper.
- Rub about 1 teaspoon of the spice mix onto each chicken breast, making sure to coat both sides evenly. Keep the leftover seasoning for later.
- Wrap each chicken breast with 2–3 slices of bacon, depending on the size of your chicken. Start at one end and overlap slightly as you go to cover the entire breast. Place the wrapped chicken onto the prepared wire rack.
- Sprinkle the remaining seasoning evenly over the top of the bacon.
- Bake in the oven at 400ºF for 20–25 minutes. Then increase the temperature to 450ºF and continue baking for another 5–10 minutes until the bacon is crispy and the chicken reaches an internal temperature of 165ºF.
