Prep Time: 10 mins | Cook Time: 5 mins | Servings: 8

Fluffy brioche slices topped with a crisp, caramelized sugar layer and drizzled with rich, velvety creme anglaise — this breakfast is pure indulgence!

Ingredients:

Creme Anglaise Sauce:

  • ¾ cup heavy cream
  • Pinch of salt
  • 3 large egg yolks
  • ¼ cup granulated sugar
  • 1 teaspoon vanilla extract or vanilla paste

French Toast:

  • 4 egg yolks
  • 1 cup heavy cream
  • ½ cup milk
  • 1 tablespoon vanilla extract or vanilla paste
  • 1 loaf (16 oz) brioche bread, thickly sliced
  • 3 tablespoons butter, for cooking
  • ⅓ cup granulated sugar, for caramelizing

Instructions:

  1. Make the Creme Anglaise: Pour the heavy cream into a medium saucepan with a pinch of salt and gently warm over medium heat until it starts to steam. Avoid boiling — you just want it hot.
  2. While the cream warms, whisk the egg yolks with the sugar in a medium bowl until pale and creamy. Hand whisking takes 2–3 minutes; a hand mixer is faster (around 30 seconds).
  3. Slowly drizzle the warm cream into the egg mixture, whisking constantly to prevent scrambling. Once combined, return everything to the saucepan.
  4. Cook on medium heat, whisking continuously, until the mixture thickens enough to coat the back of a spoon (about 3–4 minutes). Remove from heat, stir in the vanilla, and set aside.
  5. Prepare the French Toast: Heat a griddle or large skillet over medium heat. In a shallow bowl, whisk together the egg yolks, heavy cream, milk, and vanilla. Dip each brioche slice briefly in the mixture, coating both sides.
  6. Melt 1 tablespoon of butter on the griddle. Cook the soaked brioche slices for 2–3 minutes per side until golden brown, flipping only once.
  7. Caramelize & Serve: Sprinkle a thin layer of sugar over each cooked slice. Use a kitchen torch to melt and caramelize the sugar until it’s bubbly and golden. (No torch? See my tips for an alternative method.) Serve immediately, pouring the warm creme anglaise over each slice for the ultimate indulgent breakfast.
