These Cheeseburger Egg Rolls pack all your favorite burger flavors into a crispy, irresistible roll!
Ingredients
- ¼ cup finely chopped onions
- 1 lb 95% lean ground beef
- 1 tablespoon hamburger seasoning (I like McCormick Grill Mates)
- 2 tablespoons ketchup
- 2 teaspoons classic yellow mustard
- 4 wedges Laughing Cow Queso Fresco & Chipotle cheese, chopped (feel free to swap in any flavor you prefer)
- 1 oz reduced-fat sharp cheddar, shredded (Cabot is my go-to)
- ¼ cup diced dill pickles (Claussen adds great crunch)
- 8 grape tomatoes, chopped
- 16 egg roll wrappers
Instructions
- Coat a large skillet with a light layer of cooking spray and warm it over medium heat. Add the onions and sauté for a couple of minutes until they soften and become translucent. Toss in the ground beef and hamburger seasoning, breaking the meat apart as it cooks. Continue until the beef is browned and no longer pink. Drain off any excess liquid.
- Move the cooked beef into a microwave-safe bowl. Stir in the ketchup, mustard, and chopped Laughing Cow wedges. Microwave the mixture for 1 minute on high to help melt the cheese. Mix again, pressing the cheese into the beef so everything blends evenly. Add the shredded cheddar, pickles, and tomatoes, stirring until the filling is fully combined.
- Set your oven to 425°F. Line a baking sheet with foil and mist it with cooking spray to prevent sticking.
- Prepare a small bowl of water. Lay an egg roll wrapper on your work surface with one corner pointing toward you. Spoon a scant ¼ cup of filling into the center, shaping it into a horizontal line that runs from left to right, leaving a little space on each side. Fold the bottom corner over the filling and roll it once. Fold in the two side corners snugly, roll again, then use your finger to wet the top corner with water.
