Ingredients

Salmon:

  • 2 pounds wild salmon, cut into 4 fillets

Maple Teriyaki Glaze:

  • ¼ cup soy sauce
  • ¼ cup pure maple syrup
  • ¼ cup water
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tbsp ginger purée
  • 5–6 garlic cloves, minced or pressed

Mango Salsa:

  • 2 ripe mangos
  • 1 large avocado
  • 2 medium tomatoes, seeded
  • 1 small red onion (or 1 large shallot)
  • Small bunch fresh cilantro, chopped
  • Juice of 2 limes
  • Salt, to taste
  • 2 tbsp olive oil

Directions

  1. Make the sauce: Whisk together soy sauce, maple syrup, water, ginger, garlic, sesame oil, and rice vinegar in a bowl or measuring cup.
  2. Marinate the salmon: Place salmon fillets in a deep dish and pour the teriyaki sauce over them. Cover and refrigerate for 15–45 minutes.
  3. Prep the salsa: Dice the mango, avocado, and tomatoes into small cubes. Finely chop the onion and cilantro. Add everything to a bowl, but don’t season yet.
  4. Cook down the marinade: Remove salmon from the dish and pat dry with paper towels. Transfer the leftover marinade to a small saucepan. Simmer over low heat for 8–10 minutes until slightly thickened.
  5. Sear the salmon: Heat a large skillet over medium-high with a drizzle of avocado oil. Cook salmon skin-side down first, about 3–4 minutes per side (less for thin cuts), until golden and cooked through. Let rest on a wire rack.
  6. Finish the salsa: Add lime juice, olive oil, and a pinch of salt to the mango mixture. Toss gently until everything is coated.
  7. Serve: Place salmon on plates, drizzle with reduced teriyaki sauce, and top generously with mango salsa. Pair with steamed rice if you’d like.
