Ingredients

  • 2 boneless chicken breasts, sliced in half lengthwise and flattened to about ¼-inch thick
  • ⅓ cup frozen spinach, thawed and squeezed to remove excess liquid
  • 8 pieces sun-dried tomatoes, finely chopped
  • 1 ½ ounces crumbled feta cheese
  • 4 tablespoons grated Parmesan cheese, divided
  • 2 tablespoons cream cheese, softened
  • Leaves from 2 sprigs fresh thyme, chopped
  • Salt and freshly ground black pepper, to taste

Directions
