Easy Mexican Street Corn Salad – A Healthy Side for BBQs & Summer Party
Summer food has a job to do. It needs to show up fast, taste amazing, and not steal all the attention from the grill. That’s where this Mexican Street Corn Salad slides in like it owns the place. It’s colorful, creamy, zesty, and just messy enough to feel fun—without requiring a stack of napkins. Honestly, this is the kind of bowl people hover around at parties.
Inspired by classic elote, this salad takes everything you love about Mexican street corn and makes it scoopable. Sweet corn gets tossed with a creamy dressing, fresh lime juice, cilantro, garlic, and that smoky kick from chipotle powder. Cotija cheese brings the salty magic, and suddenly you’ve got a corn side dish healthy enough to feel good about, yet bold enough to keep things exciting. Win-win.
What makes it even better? It plays well with everything. Burgers, grilled chicken, tacos—no drama. It’s one of those healthy sides with sandwiches that doesn’t feel like an afterthought. It also fits right into easy healthy side dishes for BBQ menus, especially when you want something fresh but still crave comfort food vibes. IMO, it’s also a sleeper hit as a corn salad for tacos or healthy sides for tacos when you want to mix things up.
No tomatoes here, by the way. That makes it perfect for fans of salads without tomatoes and a solid salad for spring or peak summer nights. Hosting friends? This is one of those shareable dishes for party spreads that disappears faster than expected. FYI, people will ask for the recipe.
A quick tip or two: if your red onion feels aggressive, give it a quick soak in cold water to calm it down. Mince the garlic finely—no one wants a surprise garlic bomb. Feeling bold? Toss in fresh jalapeño for extra heat. This salad doesn’t judge.
From sides for summer to healthy corn side dishes you’ll actually crave, this one checks all the boxes.
