Ingredients
Chicken Marinade:
- 4 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tbsp balsamic vinegar
- 2 garlic cloves, minced
- ½ tsp dried oregano
- ½ tsp dried basil
- ¼ tsp dried thyme
- 1 tsp coarse salt
- ½ tsp black pepper
Tomatoes & Garlic Sauce:
- 1 pint cherry tomatoes, halved
- 5–6 garlic cloves, minced
- 2 tbsp melted butter
- 3 tbsp balsamic vinegar
- 1 cup shredded mozzarella cheese
- 2 tbsp fresh basil, plus extra for garnish
- Salt and black pepper, to taste
Instructions
- In a large bowl or resealable bag, mix the chicken with all marinade ingredients. Cover and chill for 30–60 minutes.
- Preheat the oven to 425°F (220°C). Lightly grease a 9x13-inch baking dish.
- In the prepared dish, toss together cherry tomatoes, garlic, melted butter, balsamic vinegar, and fresh basil (reserve the mozzarella for later). Arrange the marinated chicken on top.
- Bake for 25–30 minutes, or until the chicken reaches 165°F and is no longer pink in the center. Remove the pan from the oven.
- Switch the oven to broil. Sprinkle the shredded mozzarella evenly over each chicken breast. Return to the oven and broil for 2–3 minutes, until the cheese melts and turns golden brown.
- Garnish with extra fresh basil. Adjust salt and pepper in the tomato sauce as needed. Serve by spooning the garlicky tomato sauce over the cheesy chicken.
